- 1 pound shrimp, peeled and deveined
- 3 cups cooked rice
- 1 red bell pepper, chopped

- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste

Method
- Turn on the Instant Pot to sauté mode and add the vegetable oil.
- Once the oil is hot, add the chopped onion and garlic. Sauté for about 2 minutes or until the onion is translucent.
- Add the chopped red bell pepper, frozen peas and carrots, and shrimp. Sauté for another 2 minutes or until the shrimp turns pink.
- Add the cooked rice, soy sauce, and oyster sauce. Stir everything together until well combined.
- Cancel the sauté mode and close the Instant Pot lid. Make sure the valve is set to sealing.
- Turn on the Instant Pot to manual mode and set the timer for 5 minutes.
- Once the timer goes off, do a quick release by turning the valve to venting.
- Open the Instant Pot lid and give the fried rice a good stir.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- You can use any type of rice for this recipe, but I prefer using jasmine rice.
- If you like your fried rice spicy, add some red pepper flakes or sriracha sauce.
- You can add other vegetables to this recipe, such as broccoli or mushrooms.
