Ingredient

Method

For the chicken:

  1. Clean the chicken and remove any excess fat.
  2. In a large pot, bring the light soy sauce, dark soy sauce, Shaoxing wine, sugar, ginger, garlic, and green onions to a boil.
  3. Add the chicken to the pot and make sure it is fully submerged in the sauce. Bring the sauce back to a boil, then reduce the heat and simmer for about 45 minutes, or until the chicken is fully cooked.
  4. Remove the chicken from the pot and let it cool. Reserve the sauce.
