Ingredients

  • 2 cups of jasmine rice
  • 2 chicken thighs, cut into small pieces
  • 2 Chinese sausages, sliced
  • 1 cup of mixed vegetables (carrots, peas, corn)
  • 2 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of Chinese cooking wine
  • 1 tablespoon of sesame oil
  • 2 cups of water
  • Salt and pepper to taste

Method

  1. Rinse the rice in a bowl until the water runs clear. Drain and set aside.
  2. Marinate the chicken with soy sauce, oyster sauce, and Chinese cooking wine. Set aside for 10 minutes.
  3. Heat the Happy Call Claypot on medium heat. Add sesame oil and garlic. Stir fry for 1 minute.
  4. Add the chicken and Chinese sausages. Stir fry for 2 minutes until the chicken is browned.
  5. Add the mixed vegetables and stir fry for 1 minute.
  6. Add the rice and stir fry for 1 minute until the rice is coated with the sauce.
  7. Add 2 cups of water and stir well.
  8. Close the lid of the Happy Call Claypot and turn the heat to high. Cook for 10 minutes.
  9. Reduce the heat to low and cook for another 10 minutes.
  10. Turn off the heat and let it rest for 5 minutes.
  11. Open the lid and fluff the rice with a spatula. Serve hot.

  • You can substitute chicken with beef or pork.
