Ingredients

Method

1. Rinse the black mushrooms in cold water and soak them in 2 cups of warm water for 20 minutes. 2. In a large pot, heat the olive oil and butter over medium-high heat. 3. Add the chopped onions and garlic and cook until the onions are translucent. 4. Add the thyme and parsley and stir. 5. Add the rice and stir until the rice is coated in the oil and butter mixture. 6. Pour in the coconut milk and the 2 cups of water that the mushrooms were soaking in. 7. Add the black mushrooms and the remaining 2 cups of water. 8. Add the salt and stir. 9. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid. 10. Cook for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed. 11. Remove the pot from the heat and let it sit for 5 minutes. 12. Fluff the rice with a fork and serve.

- If you can't find dried black mushrooms, you can use fresh mushrooms and add them in step 5. - You can add chicken or shrimp to this recipe for a protein-packed meal. - Leftover rice can be stored in the refrigerator for up to 3 days.
