- 1 cup of instant rice
- 1 cup of urad dal flour
- 1 tsp of baking soda
- 1 tsp of salt
- 1/2 cup of curd
- 1/2 cup of water
- Oil for greasing
- Water for steaming

- Idli plates or cups
- Mixing bowl
- Whisk or spoon
Method
- In a mixing bowl, add 1 cup of instant rice, 1 cup of urad dal flour, 1 tsp of baking soda, and 1 tsp of salt. Mix well.
- Add 1/2 cup of curd and 1/2 cup of water to the bowl. Whisk or stir well to form a smooth batter. The batter should not be too thick or too thin.
- Let the batter rest for 5 minutes. This will help the baking soda to activate and make the idlis fluffy.
- In the meantime, bring water to a boil in the idli steamer or pressure cooker.
- Grease the idli plates or cups with oil.
- Pour the batter into the greased plates or cups, filling them up to 3/4th of their capacity.
- Place the plates or cups in the idli steamer or pressure cooker carefully.
- Steam the idlis for 10-12 minutes on medium flame.
- Once done, turn off the heat and let the idlis cool down for a couple of minutes.
- Remove the idlis from the plates or cups using a spoon or knife.
- Serve hot with chutney and sambar.
Notes
- Make sure to whisk or stir the batter well to avoid any lumps.
- Do not overfill the plates or cups as the idlis will rise while steaming.
- Let the idlis cool down for a couple of minutes before removing them from the plates or cups.
