Method

  1. Turn on the Instant Pot and select the sauté function.

  5. Add the bell peppers and cook for 2-3 minutes until they start to soften.
  6. Add the shrimp, paprika, salt, and black pepper and cook for 2-3 minutes until the shrimp turns pink.
  7. Add the rice and chicken broth and stir well.
  8. Close the Instant Pot lid and select the manual function.
  9. Set the timer for 10 minutes and let the Instant Pot do its magic.
  10. Once the timer goes off, let the pressure release naturally for 5 minutes before opening the lid.
  11. Fluff the rice with a fork and sprinkle with chopped parsley before serving.

Notes

  • You can use any type of rice for this recipe, but I recommend using long-grain white rice.
  • If you don't have chicken broth, you can use vegetable broth or water instead.
  • You can add more vegetables to this recipe if you like. Carrots, celery, and peas are great options.
