Method
1. Rinse the India Gate Basmati Rice in cold water and soak it for 30 minutes. Drain the water and set the rice aside. 2. In a mixing bowl, marinate the chicken or lamb with yogurt, biryani masala, cumin powder, coriander powder, red chili powder, and salt. Let it marinate for at least 30 minutes. 3. Heat ghee or oil in a large pot over medium heat. Add chopped onions and green chilies and sauté until the onions turn golden brown. 4. Add ginger-garlic paste and sauté for 2-3 minutes. 5. Add marinated meat and sauté until it's cooked through. 6. Add fresh mint and cilantro leaves and mix well. 7. In a separate pot, boil 4 cups of water with salt. Add the soaked India Gate Basmati Rice and cook it until it's 80% done. Drain the water and set the rice aside. 8. Layer the cooked rice over the meat mixture in the pot. Pour 1 cup of water over the rice and cover the pot with a lid. 9. Cook on low heat for 15-20 minutes, or until the rice is fully cooked. 10. Serve hot with raita or salad.
