Prep Time

The prep time for this dish is about 15 minutes. You will need to chop onions, peppers, and garlic, and cut the ham into small pieces.

Cook Time

The cook time for this dish is about 2 hours. The beans need to be cooked until they are soft, which takes about 1 1/2 hours. The rice takes about 20 minutes to cook.

Ingredients

  • 1 pound cooked ham, cut into small pieces
  • 1 pound dried red beans
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 6 cups water
  • 2 cups long-grain rice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Equipment

  • Dutch oven or large pot
  • Medium saucepan with lid
  • Cutting board and knife
  • Measuring cups and spoons

Method

  1. Sort through the dried beans and remove any debris or discolored beans. Rinse the beans in a colander and set aside.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onions, peppers, and garlic and sauté until they are softened, about 5 minutes.
  3. Add the ham to the pot and cook for another 5 minutes, stirring occasionally.
  4. Add the beans, bay leaves, thyme, cayenne pepper, and 6 cups of water to the pot. Bring to a boil, reduce heat to low, and simmer for 1 1/2 hours or until the beans are tender.
  5. While the beans are cooking, prepare the rice. Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Cover the pot and reduce heat to low. Cook for 18-20 minutes or until the rice is tender and the water is absorbed.
  6. When the beans are tender, remove the bay leaves and season the beans with salt and pepper to taste.
  7. Combine the cooked rice with the beans and ham. Stir to combine and serve hot.

Notes

  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
  • If you like your beans to be creamier, you can use a potato masher to mash some of the beans before adding the rice.
  • This dish can be made vegetarian by omitting the ham and using vegetable broth instead of water.
