- 1 1/2 pounds lamb shoulder, cubed
- 2 cups basmati rice
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground black pepper
- 3 cups chicken broth
- Salt, to taste
- Chopped fresh parsley, for garnish

Method
- Heat the olive oil in a large sauté pan over medium-high heat.
- Add the lamb and cook until browned on all sides, about 5 minutes.
- Remove the lamb from the pan and set aside.
- Add the onion and garlic to the same pan and cook until softened, about 5 minutes.
- Add the cumin, coriander, cinnamon, turmeric, ginger, and black pepper to the pan and stir to combine.
- Return the lamb to the pan and stir to coat with the spice mixture.
- Add the chicken broth to the pan and bring to a simmer.
- Cover the pan and reduce the heat to low.
- Simmer for 1 hour, or until the lamb is tender and the liquid has reduced.
- While the lamb is cooking, rinse the rice in cold water until the water runs clear.
- Bring 4 cups of water to a boil in a large pot.
- Add the rice and stir to combine.
- Cover the pot and reduce the heat to low.
- Simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.
- Fluff the rice with a fork and season with salt to taste.
- Serve the lamb over the rice and sprinkle with chopped fresh parsley.
Notes
