- 1 whole chicken (about 1.5kg)
- 4 cups of jasmine rice
- 4 cups of chicken broth
- 4 cloves of garlic, minced
- 2 inches of ginger, sliced
- 1 tablespoon of sesame oil
- 1 tablespoon of soy sauce
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1 pandan leaf, tied in a knot
- 1 cucumber, sliced
- 2 stalks of spring onions, sliced
- 2 red chillies, sliced

- Rice cooker
- Chopping board
- Knife
Method
- Clean the chicken and remove any excess fat. Rub the chicken with salt and let it sit for 30 minutes.
- In a large pot, bring the chicken broth to a boil. Add the chicken, ginger, garlic, sesame oil, soy sauce, salt, sugar, and pandan leaf. Reduce the heat and simmer for 30 minutes or until the chicken is cooked.
- Remove the chicken from the pot and place it in a bowl of iced water to cool. Reserve the chicken broth.
- Rinse the rice in cold water until the water runs clear. Add the rice to the reserved chicken broth and cook the rice in a rice cooker.
- Once the chicken has cooled, remove the skin and bones. Slice the chicken into bite-sized pieces.
- With damp hands, shape the cooked rice into small balls.
- Serve the rice balls with the sliced chicken, cucumber, spring onions, and red chillies.
Notes
- If you don't have a rice cooker, you can cook the rice in a pot on the stove.
- You can use chicken stock instead of chicken broth if you prefer.
- If you can't find pandan leaf, you can omit it from the recipe.
