Ingredients

Method

  1. In a large pot, bring 2 cups of water and 1 teaspoon of salt to a boil. Add 1 cup of rice, stir, and reduce heat to low. Cover and simmer for 18-20 minutes, or until rice is tender.
  2. In a shallow dish, combine 1 cup of flour, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of paprika.
  3. In a separate dish, whisk together 1 beaten egg and 1/2 cup of milk.
  4. Heat oil in a deep fryer or large skillet to 375°F.
  5. Dredge each fish fillet in the flour mixture, shaking off any excess. Dip in the egg mixture, then coat again in the flour mixture.
  6. Carefully place the fish fillets in the hot oil and fry for 3-4 minutes on each side, or until golden brown and crispy. Remove from oil and place on a paper towel-lined plate to drain excess oil.
  7. In a saucepan, combine 1 can of cream of mushroom soup, 1/2 cup of milk, and 1/4 cup of grated Parmesan cheese. Cook over medium heat, stirring constantly, until sauce is heated through and cheese is melted.
  8. Place a scoop of rice on each plate and top with a fish fillet. Spoon sauce over the top of the fish and rice.
  9. Serve immediately and enjoy!

Notes

For an extra crispy coating on the fish, you can double-coat it by repeating the dredging process before frying. You can also substitute the white fish fillets for your preferred type of fish.
