- 1 cup of long-grain white rice
- 2 cups of water
- 1 teaspoon of salt
- 1 pound of white fish fillets
- 1 cup of all-purpose flour
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- 1 egg, beaten
- 1/2 cup of milk
- Oil for frying
- 1 can of cream of mushroom soup
- 1/2 cup of milk
- 1/4 cup of grated Parmesan cheese

Method
- In a large pot, bring 2 cups of water and 1 teaspoon of salt to a boil. Add 1 cup of rice, stir, and reduce heat to low. Cover and simmer for 18-20 minutes, or until rice is tender.
- In a shallow dish, combine 1 cup of flour, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, and 1 teaspoon of paprika.
- In a separate dish, whisk together 1 beaten egg and 1/2 cup of milk.
- Heat oil in a deep fryer or large skillet to 375°F.
- Dredge each fish fillet in the flour mixture, shaking off any excess. Dip in the egg mixture, then coat again in the flour mixture.
- Carefully place the fish fillets in the hot oil and fry for 3-4 minutes on each side, or until golden brown and crispy. Remove from oil and place on a paper towel-lined plate to drain excess oil.
- In a saucepan, combine 1 can of cream of mushroom soup, 1/2 cup of milk, and 1/4 cup of grated Parmesan cheese. Cook over medium heat, stirring constantly, until sauce is heated through and cheese is melted.
- Place a scoop of rice on each plate and top with a fish fillet. Spoon sauce over the top of the fish and rice.
- Serve immediately and enjoy!
Notes
