Ingredients

For the chicken: - 1 whole chicken, about 1.5 kg - 2 inches ginger, sliced - 3 cloves garlic, crushed - 1 tbsp salt - 1 tsp sesame oil - 1 tbsp vegetable oil - 4 cups water For the rice: - 2 cups jasmine rice - 2 cups chicken broth - 2 cloves garlic, minced - 1 inch ginger, minced - 1 tsp sesame oil - 1 tsp salt For the sauce: - 3 tbsp soy sauce - 2 tbsp sesame oil - 2 tbsp ginger, minced - 2 tbsp garlic, minced - 2 tbsp chili sauce

Equipment

- Instant Pot - Rice cooker - Mixing bowl - Measuring cups and spoons - Cutting board - Knife

Method

1. Rinse the chicken under cold water and pat dry with paper towels. 2. Rub the chicken with salt and sesame oil. 3. Heat the vegetable oil in the Instant Pot on sauté mode. Add the ginger and garlic and sauté for 1 minute. 4. Add the chicken to the Instant Pot and pour in the water. 5. Close the lid and set the Instant Pot to manual high pressure for 15 minutes. 6. Once the cooking time is up, let the Instant Pot release the pressure naturally for 10 minutes, then quick release the remaining pressure. 7. Remove the chicken from the Instant Pot and place it in a bowl of ice water for 5 minutes to stop the cooking process. 8. In the meantime, rinse the rice in cold water and drain well. 9. Add the rice, chicken broth, garlic, ginger, sesame oil, and salt to a rice cooker and cook according to the manufacturer's instructions. 10. Once the rice is cooked, fluff it with a fork and set it aside. 11. To make the sauce, mix together the soy sauce, sesame oil, ginger, garlic, and chili sauce in a small bowl. 12. Serve the chicken on a platter with the rice and sauce on the side.

- Make sure to rinse the rice well before cooking to remove excess starch. - You can also use chicken thighs or drumsticks instead of a whole chicken. - You can add pandan leaves to the rice cooker for added flavor.
