Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1 cup sugar

  • 1/4 cup raisins
  • 1/4 cup cashews

  • 1/4 cup pistachios
  • 1 tsp cardamom powder
  • 1 tsp saffron threads

Method

  1. Wash the basmati rice in cold water, and soak it in water for 30 minutes.
  2. Drain the water from the rice and set it aside.
  3. In a heavy-bottomed pan, heat the ghee over medium heat.
  4. Add the cashews, almonds, and pistachios to the pan and fry them until golden brown. Remove them from the pan and set them aside.
  5. Add the raisins to the same pan and fry them until they become plump. Remove them from the pan and set them aside.
  6. Add the rice to the same pan and fry it for 2 to 3 minutes.
  7. Add 2 cups of water to the pan and bring it to a boil.
  8. Reduce the heat to low and cover the pan with a lid. Let the rice cook for 10 minutes.
  9. After 10 minutes, add the sugar, cardamom powder, and saffron threads to the pan. Mix well.
  10. Close the lid and cook for another 10 minutes on low heat.
  11. After 10 minutes, turn off the heat and let the rice sit for 5 minutes.
  12. Open the lid, add the fried nuts and raisins to the pan, and mix well.
  13. Your Indian Sweet Rice is ready to serve. Enjoy!

Notes

  • Make sure to wash the rice well, and soak it for 30 minutes before cooking.
  • Add the sugar, cardamom powder, and saffron threads only after the rice has cooked for 10 minutes.
  • After adding the sugar, mix well and close the lid to cook for another 10 minutes.
  • Let the rice sit for 5 minutes after turning off the heat before adding the nuts and raisins.
  • You can adjust the amount of sugar according to your taste.
