Ingredients

  • 2 cups of basmati rice
  • 1 lb boneless chicken
  • 2 tbsp vegetable oil

  • 1 cup plain yogurt
  • 2 tsp biryani masala
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 2 bay leaves
  • 3 green cardamom
  • 3 cloves
  • 1 cinnamon stick
  • Salt, to taste
  • 4 cups water
  • Fried onions, for garnish
  • Fresh coriander, chopped, for garnish

Equipment

  • A frying pan
  • A mixing bowl

  • A sharp knife

Method

  1. Wash the rice and soak it in water for 20 minutes.
  2. Heat oil in a large pot and add the onions. Sauté until golden brown.
  3. Add ginger paste and garlic paste and sauté for a minute.
  4. Add chicken and cook until the chicken is browned on all sides.
  5. Add yogurt, biryani masala, turmeric powder, red chili powder, garam masala, bay leaves, cardamom, cloves, cinnamon stick, and salt. Mix well.
  6. Cook for 5 minutes or until the chicken is cooked through.
  7. Drain the water from the rice and add it to the pot. Mix well.
  8. Add 4 cups of water and bring it to a boil.
  9. Turn the heat to low, cover the pot, and cook for 15 to 20 minutes or until the water is absorbed and the rice is cooked.
  10. Remove from heat and let it sit for 5 minutes.
  11. Fluff the rice with a fork and garnish with fried onions and fresh coriander.
  12. Serve hot with raita and salad.

  • You can add more or less spices according to your taste.
  • You can use bone-in chicken for more flavor.
  • You can add vegetables like carrots, peas, and potatoes to the biryani for a more nutritious meal.
