Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1 tbsp oil
  • 1 bay leaf
  • 2 cloves
  • 2 cardamom pods
  • 1 cinnamon stick
  • 1 onion, sliced
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 green chilies, chopped
  • 1/2 cup yogurt
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala powder
  • 1/2 tsp cumin powder
  • Salt, to taste
  • 1 lb chicken, cut into pieces
  • 1/2 cup fresh coriander leaves, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 1 lemon, sliced
  • Fried onions, for garnishing

Equipment

Method

  1. Wash the rice in running water until the water runs clear. Soak the rice in water for 30 minutes.
  2. In a large pot, heat oil and add bay leaf, cloves, cardamom, and cinnamon stick. Fry for a few seconds until fragrant.
  3. Add sliced onions and fry until they turn golden brown.
  4. Add ginger paste, garlic paste, and green chilies. Fry for a minute.
  5. Add yogurt, red chili powder, turmeric powder, garam masala powder, cumin powder, and salt. Mix well and cook for 2-3 minutes.
  6. Add chicken pieces and cook until they turn golden brown on all sides.
  7. Add coriander and mint leaves. Cook for a minute.
  8. Add 4 cups of water and bring it to a boil.
  9. Drain the soaked rice and add it to the boiling water. Mix well and add lemon slices on top.
  10. Cover the pot with a lid and cook on low heat for 15-20 minutes or until the rice is fully cooked.
  11. Garnish with fried onions and serve hot.

Notes

You can use mutton or beef instead of chicken. Adjust the cooking time accordingly.
