Ingredients

For the chicken:
  • 1 whole chicken (about 1.5 kg)
  • 4 slices of ginger

  • 1 tablespoon of sesame oil
For the rice:
  • 2 cups of jasmine rice
  • 2 tablespoons of oil
  • 4 cloves of garlic

  • 1 teaspoon of salt
  • 2 cups of chicken broth
For the chili sauce:
  • 6 red chili peppers
  • 2 cloves of garlic
  • 2 tablespoons of ginger
  • 2 tablespoons of vinegar
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
For the soy sauce:
  • 2 tablespoons of soy sauce
  • 2 tablespoons of dark soy sauce
  • 2 tablespoons of sesame oil
  • 1 tablespoon of sugar
  • 1 clove of garlic, minced
  • 2 tablespoons of chicken broth

Equipment

  • A large pot for boiling chicken
  • A rice cooker or pot for cooking rice
  • A blender or food processor for making chili sauce
  • A small bowl for mixing soy sauce

Method

  1. Start by washing the chicken and removing any excess fat. Add ginger, garlic, spring onion, salt, and sesame oil into the cavity of the chicken.
  2. Fill a large pot with water and bring it to a boil. Once the water is boiling, carefully lower the chicken into the pot, breast side down. Reduce the heat to low, cover the pot, and let the chicken cook for 30 minutes.
  3. After 30 minutes, turn off the heat and let the chicken sit in the pot for an additional 30 minutes. After that, remove the chicken from the pot and set it aside to cool.
  4. While the chicken is cooling, prepare the rice. Rinse the rice until the water runs clear. In a pot, sauté garlic and ginger with oil until fragrant. Add the rice and stir until it is coated with oil. Add chicken broth and salt and bring to a boil. Once it is boiling, cover the pot and reduce the heat to low. Let it cook for 20 minutes.
  5. Meanwhile, prepare the chili sauce. Blend the chili peppers, garlic, ginger, vinegar, sugar, and salt until it becomes a smooth paste.
  6. For the soy sauce, mix all the ingredients in a small bowl and set it aside.
  7. Once the chicken has cooled, chop it up into bite-sized pieces and arrange them on a plate.
  8. Serve the chicken with the fragrant rice, chili sauce, and soy sauce on the side.

  • Make sure to rinse the rice until the water runs clear to remove any excess starch.
