Ingredients

  • 2 cups basmati rice

  • 1/4 teaspoon ground nutmeg

  • 1/2 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pistachios
  • 1/2 cup chopped almonds
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped dried apricots
  • 1/2 cup chopped dried cherries
  • 1/2 cup pomegranate seeds
  • 1/4 teaspoon saffron threads
  • 2 tablespoons hot water

Method

  1. Wash the rice several times in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
  2. While the rice is soaking, heat the oil in a frying pan over medium heat. Add the diced onion and sauté until golden brown, about 10 minutes.
  3. Add the cinnamon, cardamom, cumin, nutmeg, black pepper, and salt to the onions and sauté for an additional 2 minutes.
  4. Remove the frying pan from the heat and add the dried cranberries, pistachios, almonds, walnuts, dried apricots, and dried cherries. Mix well.
  5. Drain the rice and add it to a large pot with 4 cups of water. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.
  6. In a small bowl, soak the saffron threads in 2 tablespoons of hot water for 10 minutes.
  7. After the rice has simmered for 10 minutes, drain any remaining water and add the sautéed onion mixture to the pot. Mix well.
  8. Drizzle the saffron water over the rice and onion mixture.
  9. Cover the pot with a tight-fitting lid and simmer on low heat for an additional 40 minutes, or until the rice is fully cooked.
  10. Once the rice is cooked, remove the pot from the heat and allow it to rest for 5 minutes.
  11. Transfer the jeweled rice to a serving dish and sprinkle with the pomegranate seeds.

Notes

  • You can substitute any of the dried fruits and nuts for your favorites.
  • If you don't have saffron, you can use turmeric as a substitute.
  • Adding a little butter or ghee to the rice at the end of cooking can add a nice touch.
