Ingredients:

- 2 cups basmati rice - 4 tbsp ghee - 1 cinnamon stick - 2 cardamom pods - 2 cloves - 1 bay leaf - 1 onion, sliced - 4 garlic cloves, minced - 1 tsp ginger paste - 2 green chilies, slit - Salt to taste - 4 cups water

Equipment:

- Large pot with lid - Wooden spoon - Cutting board - Knife - Measuring cups and spoons

Method:

1. Rinse the basmati rice in cold water and soak it for 20 minutes. 2. In a large pot, melt the ghee over medium heat. 3. Add the cinnamon stick, cardamom pods, cloves, and bay leaf to the pot and sauté for a minute or until fragrant. 4. Add the sliced onion, minced garlic, ginger paste, and slit green chilies to the pot and sauté until the onion turns translucent. 5. Drain the water from the soaked basmati rice and add it to the pot. Sauté for 2-3 minutes or until the rice is coated with ghee and the spices. 6. Add 4 cups of water and salt to taste to the pot and stir well. 7. Cover the pot with a lid and cook the rice on low heat for about 20 minutes or until the rice is cooked and the water is absorbed. 8. Turn off the heat and let the rice rest for 5-10 minutes. 9. Fluff the rice with a fork and remove the whole spices before serving.

- You can add more or less water depending on the type of rice you use. - You can also add vegetables like peas, carrots, and potatoes to the rice to make it more nutritious.
