Ingredients

Method

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the cumin seeds and let them splutter for a few seconds.
  3. Add the chopped onions and garlic and sauté until the onions are soft and translucent.
  4. Add the chopped cabbage and carrot and cook for 5 minutes or until the vegetables are slightly tender.
  5. Add the spices (coriander powder, turmeric powder, and red chili powder) and salt to taste. Mix well and cook for another minute.
  6. Add the rice and stir well to coat the rice with the spices.
  7. Add enough water (about 3 cups) to cover the rice and vegetables. Bring to a boil.
  8. Reduce the heat to low, cover the pot, and let it simmer for 10 minutes.
  9. Add the Hokkien noodles and stir well to combine.
  10. Cover the pot again and let it cook for another 10-15 minutes or until the rice and noodles are cooked through.
  11. Remove from heat and let it sit for 5 minutes.
  12. Fluff the rice with a fork and serve hot.

Notes

  • Make sure to stir the ingredients occasionally to prevent sticking and burning.
  • You can add other vegetables like bell peppers, peas, or corn to this recipe.
