- 1 teaspoon dried oregano
- 1 teaspoon paprika

- 8 cups water
- 4 cups cooked rice

Method
- Sort and rinse the beans in cold water. Drain and set aside.
- In a large pot or Dutch oven, sauté the sausage over medium-high heat until browned, about 5 minutes. Remove the sausage from the pot and set aside.
- Add the onion, celery, and bell pepper to the pot and sauté until softened, about 5 minutes.
- Add the garlic and sauté for another minute.
