  • 8 cups water
  • 4 cups cooked rice

Method

  1. Sort and rinse the beans in cold water. Drain and set aside.
  2. In a large pot or Dutch oven, sauté the sausage over medium-high heat until browned, about 5 minutes. Remove the sausage from the pot and set aside.
  3. Add the onion, celery, and bell pepper to the pot and sauté until softened, about 5 minutes.
  4. Add the garlic and sauté for another minute.
  5. Add the beans, bay leaves, thyme, oregano, paprika, cayenne pepper, salt, black pepper, and water to the pot. Stir well.
  6. Bring the mixture to a boil, then reduce the heat to low and simmer for about 2 hours, or until the beans are tender, stirring occasionally.
  7. Remove the bay leaves from the pot and discard.
  8. Mash some of the beans against the side of the pot to thicken the mixture.
  9. Add the sausage back to the pot and stir well.
  10. Serve hot over a bed of cooked rice.

Notes

  • You can use canned red beans instead of dried beans, but the flavor will not be as rich.
  • You can also use ham hocks or smoked turkey instead of sausage, or omit the meat altogether for a vegetarian version.
