Ingredients

  • 2 cloves Garlic (minced)
  • 1 tsp Paprika
  • 1/2 tsp Ground Cumin
  • 1/2 tsp Salt
  • 1 1/4 cups Chicken Broth
  • 1/2 cup Tomato Sauce
  • 1/2 cup Frozen Peas

Equipment

Method

  1. Turn on your Instant Pot and select the sauté function. Add olive oil to the pot.
  2. When the oil is hot, add onions and cook for 2-3 minutes until they become translucent.
  3. Add in the bell peppers, garlic, paprika, cumin, and salt. Stir everything together for a minute or two.
  4. Add in the uncooked rice and stir until everything is well combined.
  5. Pour in the chicken broth and tomato sauce, and stir well.
  6. Close the Instant Pot lid and set it to manual high pressure for 22 minutes.
  7. Once the timer goes off, let the pressure release naturally for 10 minutes. Then, turn the valve to venting and release any remaining pressure.
  8. Once the pressure is fully released, open the Instant Pot lid and add in the frozen peas.
  9. Give everything a good stir and let it sit for a couple of minutes to allow the peas to thaw and warm up.
  10. Your Instant Pot Spanish Brown Rice is now ready to serve.

Notes

Make sure to rinse the brown rice thoroughly before adding it to the Instant Pot to remove any excess starch.
