- 1 cup Brown Rice
- 1 tbsp Olive Oil
- 1/2 Onion (diced)
- 1/2 Green Bell Pepper (diced)
- 1/2 Red Bell Pepper (diced)
- 2 cloves Garlic (minced)
- 1 tsp Paprika
- 1/2 tsp Ground Cumin
- 1/2 tsp Salt
- 1 1/4 cups Chicken Broth
- 1/2 cup Tomato Sauce
- 1/2 cup Frozen Peas
Equipment
- Instant Pot
- Cutting Board
- Knife
- Measuring Cups and Spoons
- Wooden Spoon or Spatula
Method
- Turn on your Instant Pot and select the sauté function. Add olive oil to the pot.
- When the oil is hot, add onions and cook for 2-3 minutes until they become translucent.
- Add in the bell peppers, garlic, paprika, cumin, and salt. Stir everything together for a minute or two.
- Add in the uncooked rice and stir until everything is well combined.
- Pour in the chicken broth and tomato sauce, and stir well.
- Close the Instant Pot lid and set it to manual high pressure for 22 minutes.
- Once the timer goes off, let the pressure release naturally for 10 minutes. Then, turn the valve to venting and release any remaining pressure.
- Once the pressure is fully released, open the Instant Pot lid and add in the frozen peas.
- Give everything a good stir and let it sit for a couple of minutes to allow the peas to thaw and warm up.
- Your Instant Pot Spanish Brown Rice is now ready to serve.
