Ingredients

  • 1 cup Basmati Rice
  • 1 cup Coconut Milk
  • 1 Onion, sliced
  • 2 Green Chilies, slit
  • 1 tsp Cumin Seeds
  • 1 tsp Mustard Seeds
  • 1 tsp Ginger Garlic Paste
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Red Chili Powder
  • 1/4 cup Cashews, chopped
  • 2 tbsp Ghee
  • Salt, to taste
  • Coriander leaves, for garnish

Method

  1. Wash the rice and soak it for 30 minutes.
  2. In a pressure cooker or a pot, heat ghee and add cumin seeds and mustard seeds.
  3. When the seeds start to splutter, add sliced onions and green chilies. Saute until the onions turn translucent.
  4. Add ginger garlic paste and saute for a minute.
  5. Now add turmeric powder and red chili powder. Mix well.
  6. Drain the water from the soaked rice and add it to the pressure cooker or pot. Mix well with the masala.
  7. Add chopped cashews and salt to taste. Mix well.
  8. Add coconut milk and 1 1/2 cups of water. Mix well.
  9. Cover the pressure cooker or pot and cook for 2 whistles or for 15-20 minutes on low flame.
  10. Turn off the flame and let the pressure release naturally.
  11. Garnish with coriander leaves and serve hot.

  • You can also use a rice cooker instead of a pressure cooker or pot.
  • Adjust the amount of green chilies and red chili powder according to your taste preference.
