- 1/2 cup of tamarind pulp
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp salt
- 2-3 bay leaves
- 4-5 cloves
- 1 cinnamon stick
- 2-3 green cardamom pods
- 1 black cardamom pod
- 1/4 cup of coriander leaves, chopped

- A frying pan

Method
1. Begin by washing the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes. 2. In a frying pan, heat the oil over medium heat. Add cumin seeds, mustard seeds, bay leaves, cloves, cinnamon stick, and cardamom pods. Fry for 30 seconds. 3. Add onions to the frying pan and fry until they are golden brown. 4. Add turmeric powder, red chili powder, and salt to the frying pan. Fry for 30 seconds. 5. Add tamarind pulp to the frying pan and mix well. Cook for 3-4 minutes. 6. Drain the soaked rice and add it to the frying pan. Mix well. 7. Add 2 cups of water to the frying pan and bring to a boil. 8. Reduce the heat to low and cover the frying pan with a lid. Cook for 15-20 minutes, or until the rice is cooked through. 9. Once the rice is cooked, remove the lid and fluff the rice with a fork. 10. Garnish the rice with chopped coriander leaves and serve hot.Notes
