- 1 kg basmati rice
- 1 kg chicken, cut into pieces
- 2 cups yogurt
- 4 onions, sliced
- 4 tomatoes, chopped

- 2 tbsp ginger-garlic paste
- 2 tsp red chili powder
- 1 tsp turmeric powder
- 2 tsp garam masala powder
- 1 tsp cumin seeds
- 4-5 green cardamom pods
- 4-5 cloves
- 2-3 cinnamon sticks
- Salt to taste
- 2 tbsp chopped mint leaves
- 2 tbsp chopped coriander leaves
- Fried onions for garnish

Method
- Soak the basmati rice in water for 30 minutes, then drain.
- In a large pot, heat the oil over medium-high heat. Add the cumin seeds, cardamom, cloves, and cinnamon sticks and fry for 1-2 minutes until fragrant.
- Add the sliced onions and fry until golden brown.
- Add the ginger-garlic paste and fry for 1-2 minutes.
- Add the chopped tomatoes, red chili powder, turmeric powder, and salt. Cook for 5 minutes until the tomatoes are soft.
- Add the chicken pieces and cook for 10 minutes until browned.
- Add the yogurt, garam masala powder, mint leaves, and coriander leaves. Cook for another 10-15 minutes until the chicken is cooked through.
- In a separate pot, boil 12 cups of water. Add the soaked rice and cook for 5-7 minutes until the rice is partially cooked. Drain the rice.
- In the same pot, layer the partially cooked rice and chicken mixture, starting and ending with the rice. Cover with a tight-fitting lid and cook over low heat for 20-25 minutes until the rice is fully cooked.
- Garnish with fried onions and serve hot with raita and salad.

- Make sure to use high-quality basmati rice for the best results.
- You can adjust the spice level to your liking by adding more or less red chili powder.
