For the hibachi sauce:

  • 1/4 cup mirin
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch

Equipment

To make this recipe, you will need a grill or grill pan, a wok or large skillet, and a mixing bowl.

Method

  1. In a mixing bowl, combine the sliced steak, soy sauce, sesame oil, cornstarch, and garlic powder. Marinate for at least 20 minutes.
  2. Heat the grill or grill pan over high heat. Grill the steak for 2-3 minutes per side, or until cooked to your liking. Set aside.
  3. In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the diced carrots, peas, and onion. Stir-fry for 2-3 minutes, or until the vegetables are tender.
  4. Push the vegetables to the side of the wok or skillet. Add the beaten eggs and scramble until cooked.
  5. Add the cooked rice to the wok or skillet. Stir-fry for 2-3 minutes, or until the rice is heated through.
  6. In a small bowl, whisk together the soy sauce, garlic powder, ginger powder, and chopped green onions. Pour the mixture over the fried rice and stir to combine.
  7. In a small saucepan, combine the soy sauce, mirin, brown sugar, rice vinegar, sesame oil, and cornstarch. Cook over medium heat, stirring constantly, until the sauce thickens.
  8. Serve the steak and fried rice on a plate. Drizzle the hibachi sauce over the top.
  9. Garnish with additional chopped green onions, if desired.

Notes

For best results, use day-old cooked rice as it is drier and will fry better. If you do not have mirin, you can use sweet sake or white wine instead.
