Method

Fry until the dal turns golden brown. 6. Add chopped onions and fry until they turn translucent. 7. Add the Gongura paste and fry for 2-3 minutes. 8. Add turmeric powder and salt to taste. Mix well. 9. Drain the water from the rice and add it to the cooker or pot. Mix well. 10. Add 2 cups of water and mix well. 11. Cover the cooker or pot with a lid and cook for 2-3 whistles in a pressure cooker or for 20-25 minutes in a pot. 12. Once the pressure is released from the cooker or pot, open the lid and fluff the rice with a fork. 13. Serve hot with raita or pickle.

Notes

  • If you don't have a pressure cooker, you can cook the rice in a pot with a lid. Just add enough water to cover the rice and cook on low heat until the water is absorbed and the rice is cooked.
  • If you don't like spicy food, you can reduce the number of green chilies or skip them altogether.
  • Gongura leaves are easily available in Indian grocery stores or online.
