- 3 cups of long-grain rice
- 1 can of tomato paste
- 2 large onions, chopped
- 3 large tomatoes, chopped
- 2 red bell peppers, chopped
- 2 green bell peppers, chopped
- 3 cloves of garlic, minced
- 1 teaspoon of thyme
- 1 teaspoon of curry powder
- 1 teaspoon of dried basil
- 1 teaspoon of dried oregano
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 4 cups of chicken or vegetable broth
- 1/2 cup of vegetable oil
Equipment
- A large pot with a lid
- A wooden spoon
- A sharp knife
- A cutting board
Method
- Wash the rice in cold water until the water runs clear. Drain the rice and set it aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
- Add the chopped tomatoes, red and green bell peppers, and minced garlic to the pot. Stir well and cook for 5-7 minutes or until the vegetables are soft.
- Add the tomato paste, thyme, curry powder, dried basil, dried oregano, salt, and black pepper to the pot. Stir well and cook for another 5 minutes.
- Add the washed rice to the pot and stir well. Pour in the chicken or vegetable broth, and stir again.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let the rice cook for 25-30 minutes or until the liquid has been absorbed and the rice is cooked through.
- Once the rice is cooked, fluff it with a fork and serve hot.
