- 2 tbsp oil
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp garam masala
- Salt to taste
- Cilantro, chopped for garnish

Method
- Heat oil in a wok or a large frying pan over medium-high heat.
- Once the oil is hot, add cumin seeds and mustard seeds and let them splutter.
- Add chopped onions, minced garlic, grated ginger, and chopped green chillies. Saute until onions become translucent.
- Add mixed vegetables and stir-fry for a couple of minutes.
- Now add turmeric powder, red chilli powder, and garam masala. Mix well.
- Next, add cooked rice and salt to taste. Mix everything until the rice is well coated with the masala.
- Cover the wok or pan and let it cook for 5-7 minutes on low heat.
- Turn off the heat and garnish with chopped cilantro.
- Serve hot with raita or any curry of your choice.
Notes
- Make sure to use leftover rice or rice that has been cooked a few hours before. Freshly cooked rice tends to get too sticky when used in fried rice.
- You can use any vegetables of your choice. Bell peppers, mushrooms, and broccoli also work well in this recipe.
