Recipe Tips

  • Make sure to use cold cooked rice in this recipe. Using warm or freshly cooked rice will result in a mushy fried rice.
  • Stir-fry the vegetables on high heat to ensure that they are cooked but still have a slight crunch.
  • Don't overcook the eggs. Scramble them until they are just cooked and still slightly runny.
  • Use a spatula to break up any clumps in the rice and stir-fry it evenly.
  • Season the fried rice with salt and pepper to taste, but be careful not to add too much salt as the soy sauce and oyster sauce are already salty.
