- 1 whole chicken, cut into 8 pieces
- 2 cups basmati rice
- 4 cups chicken broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon turmeric
- 1 tablespoon paprika
- 1 tablespoon cumin
- 1 tablespoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
Equipment
- Dutch oven or large pot with lid
- Cutting board and knife
- Measuring cups and spoons
- Spatula or wooden spoon
Method
- Heat the olive oil in a Dutch oven or large pot over medium heat. Add the chicken pieces and brown on all sides, about 5 minutes per side. Remove the chicken from the pot and set aside.
- Add the onion and garlic to the pot and sauté for 2-3 minutes until softened.
- Add the turmeric, paprika, cumin, salt and black pepper to the pot and stir to combine with the onion and garlic.
- Add the rice to the pot and stir to coat with the spices and onion mixture.
- Add the chicken broth to the pot and stir to combine with the rice mixture.
- Return the chicken pieces to the pot, placing them on top of the rice mixture.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer for 30-35 minutes until the rice is tender and the chicken is cooked through.
- Sprinkle the chopped parsley and cilantro over the top of the chicken and rice mixture.
- Serve hot and enjoy!
