- 3 cloves of garlic, minced

- 1/4 cup of chopped fresh parsley
- 1/4 cup of sliced green onions
- 2 tablespoons of olive oil

Method
- Start by rinsing the brown rice under cold water and then drain it.
- In a large mixing bowl, combine the chicken broth, smoked paprika, oregano, salt, and black pepper.
- Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on all sides, about 5 minutes.
- Remove the chicken from the skillet and set it aside.
- Add the onion and bell peppers to the skillet and cook for 3-4 minutes or until they are soft.
- Add the garlic and cook for another minute.
- Add the rice to the skillet and stir to combine it with the vegetables.
- Add the chicken broth mixture to the skillet and bring it to a boil.
- Reduce the heat to low, cover the skillet with a lid, and let it simmer for 35-40 minutes or until the rice is tender.
- Stir in the chicken, peas, corn, parsley, and green onions and cook for another 5 minutes.
- Remove the skillet from the heat and let it sit for 5 minutes before serving.
