Description

Ingredients

  • 2 cups of brown rice
  • 4 cups of chicken broth

  • 1/2 cup of frozen corn
  • 3 cloves of garlic, minced
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of dried oregano
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of sliced green onions
  • 2 tablespoons of olive oil

Method

  1. Start by rinsing the brown rice under cold water and then drain it.
  2. In a large mixing bowl, combine the chicken broth, smoked paprika, oregano, salt, and black pepper.
  3. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook until browned on all sides, about 5 minutes.
  4. Remove the chicken from the skillet and set it aside.
  5. Add the onion and bell peppers to the skillet and cook for 3-4 minutes or until they are soft.
  6. Add the garlic and cook for another minute.
  7. Add the rice to the skillet and stir to combine it with the vegetables.
  8. Add the chicken broth mixture to the skillet and bring it to a boil.
  9. Reduce the heat to low, cover the skillet with a lid, and let it simmer for 35-40 minutes or until the rice is tender.
  10. Stir in the chicken, peas, corn, parsley, and green onions and cook for another 5 minutes.
  11. Remove the skillet from the heat and let it sit for 5 minutes before serving.

Notes

This recipe makes about 6 servings. You can store any leftovers in an airtight container in the fridge for up to 3 days.
