Ingredients

For the chicken drumsticks:
  • 4 chicken drumsticks
  • 1 thumb-sized ginger, julienned

  • Water, enough to cover the chicken drumsticks
For the rice:
  • 2 cups of Jasmine rice
  • 2 cups of chicken broth
  • 2 cloves of garlic, minced
  • 1 thumb-sized ginger, julienned
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of salt
For the sauces:
  • 1 tablespoon of ginger paste
  • 1 tablespoon of garlic paste
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of oyster sauce

Equipment

  • A large pot with a lid
  • A rice cooker
  • A mixing bowl
  • A serving dish

Method

1. Clean the chicken drumsticks and remove any excess fat. 2. In a large pot, add enough water to cover the chicken drumsticks. 3. Add the ginger, scallions, and salt to the pot. 4. Bring the pot to a boil and reduce to low heat. 5. Simmer the chicken drumsticks for 30 minutes or until fully cooked. 6. Remove the chicken drumsticks from the pot and set aside. 7. Strain the chicken broth and measure 2 cups of the broth. 8. Wash the rice and drain. 9. In a rice cooker, add the rice, chicken broth, garlic, ginger, vegetable oil, and salt. 10. Cook the rice according to the rice cooker's instructions. 11. In a mixing bowl, combine the ginger paste, garlic paste, soy sauce, sesame oil, and oyster sauce. 12. Serve the cooked chicken drumsticks on a bed of rice and drizzle the sauce on top.

Notes

For added flavour, you can add pandan leaves to the rice cooker while cooking the rice.
