Method

  1. Set your Instant Pot to the sauté function and add a tablespoon of oil.
  2. Add the diced onion, carrots, celery, and garlic. Sauté for about 2-3 minutes, until the vegetables have begun to soften.
  3. Add the chicken breasts, wild rice, chicken broth, thyme, bay leaf, salt, and pepper. Stir to combine.
  4. Lock the lid of the Instant Pot and set it to manual mode for 20 minutes.
  5. When the timer goes off, allow the pressure to release naturally for 10 minutes.
  6. Remove the chicken breasts from the soup and shred them with two forks.
  7. In a small bowl, whisk together the heavy cream and cornstarch. Add this mixture to the soup and stir well.
  8. Add the shredded chicken back to the soup and stir well.
  9. Let the soup cook on the sauté function for another 5-10 minutes, until it has thickened to your desired consistency.
  10. Remove the bay leaf from the soup and serve hot.
