- 4 cups glutinous rice

- 4 salted duck egg yolks, cut into small pieces
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 tbsp dark soy sauce
- 1 tbsp sugar
- 1 tsp salt
- 20-25 bamboo leaves, soaked in water

- Large pot or wok
- Steamer basket
- String or twine
Method
- Wash the glutinous rice and soak it in water for at least 4 hours, or overnight.
- Marinate the pork belly with soy sauce, oyster sauce, dark soy sauce, sugar, and salt for at least 1 hour.
- Heat a large pot or wok over medium-high heat and add the pork belly. Cook until browned, about 5-7 minutes.
- Add the shiitake mushrooms and cook for another 2-3 minutes.
- Add the salted duck egg yolks and cook for another minute.
- Drain the glutinous rice and mix it with the pork belly mixture.
- Take a bamboo leaf and fold it in half lengthwise to form a cone.
- Add a spoonful of the glutinous rice mixture into the cone.
- Add another bamboo leaf on top of the rice mixture and fold the edges of the leaves together to form a pyramid shape.
- Tie the dumpling with string or twine to keep it closed.
- Repeat this process with the remaining rice and filling.
- Place the dumplings in a steamer basket and steam for 2 hours.
- Remove the dumplings from the steamer and let them cool for a few minutes before serving.
Notes
- You can add other ingredients to the filling, such as peanuts, chestnuts, or dried shrimp.
- If you don't have bamboo leaves, you can use banana leaves or parchment paper instead.
