Ingredients

  • 1 cup basmati rice

  • 1 teaspoon turmeric powder

Method

  1. Wash the rice and soak it in water for 30 minutes.
  2. In a pot, heat ghee or oil and add chopped onions, garlic and ginger. Fry until onions are golden brown.
  3. Add cumin seeds, coriander powder, turmeric powder, and red chili powder. Fry for 1 minute.
  4. Drain the water from the soaked rice and add it to the pot. Fry for 2-3 minutes.
  5. Add 1 1/2 cups of water and salt to taste. Bring to a boil and then turn the heat to low. Cover the pot and let the rice cook for 15-20 minutes.
  6. In a frying pan, add jaggery and water. Cook on medium heat until the jaggery has melted and the mixture has thickened.
  7. Once the rice is cooked, add the jaggery mixture to the pot and mix well. Cover the pot and let it cook on low heat for 5 minutes.
  8. Turn off the heat and let the rice sit for 5 minutes before serving.
  9. Garnish with chopped coriander or mint leaves before serving.

Notes

  • You can adjust the amount of jaggery according to your taste.
  • You can also add raisins and nuts to the dish for added texture and flavor.
  • Make sure to soak the rice for at least 30 minutes to ensure even cooking.
