Method

  4. If using banana leaves, cut them into rectangles that will fit the baking pan. Wash them thoroughly and wipe them dry. Line the baking pan with banana leaves, making sure they overlap each other and cover the sides of the pan.
  5. Pour the bibingka mixture into the lined baking pan. Smooth the top with a mixing spoon.
  6. Bake in the preheated oven for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the bibingka cool down before slicing it into squares or rectangles. Serve warm or at room temperature.
