- 2 cups cooked brown rice
- 2 eggs, lightly beaten
- 1/2 cup frozen peas and carrots

- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 2 tablespoons low-sodium soy sauce
- 1/4 teaspoon ground black pepper

Method
- Heat the wok or skillet over medium-high heat.
- Add the vegetable oil and swirl to coat the bottom of the pan.
- Add the beaten eggs and scramble them until they are cooked through. Remove from the pan and set aside.
- Add the garlic to the pan and stir-fry for 10 seconds.
- Add the peas and carrots and stir-fry for 1-2 minutes or until they are heated through.
- Add the cooked brown rice to the pan and stir-fry for 2-3 minutes or until it is heated through.
- Add the cooked eggs back to the pan and stir-fry for 1-2 minutes.
- Add the green onions, soy sauce and black pepper to the pan and stir-fry for 1-2 minutes.
- Remove from heat and serve immediately.

- You can use any vegetables you like in this recipe.
- You can also add cooked chicken or shrimp to this recipe to make it a complete meal.
